Preparation of the ingredients
1. Dice the potatoes, carrots, celery, onion and tomatoes
2. Finely chop the garlic cloves
Preparing the soup
1. In a large mixing bowl, combine ground beef, cooked rice, bread crumbs, egg, finely chopped onion, minced garlic, ground cumin, dried oregano, salt, and black pepper. Mix well.
2. Form the mixture into small meatballs, about 1 inch in diameter.
3. Heat the olive oil. Add the meatballs and heat for about 5 minutes, or until browned on all sides.
4. Takeout the meatballs and add the diced onion, carrots, and celery to the pot and cook until the vegetables are tender, about 5 minutes.
5. Add the chicken broth, diced potatoes, canned diced tomatoes, and meatballs to the pot. Boil the soup and then simmer for 30 minutes.
6. Stir in chopped fresh cilantro and serve hot.
Variations on the recipe
1. You can add some hot sauce or crushed red pepper flakes to the broth if you like your food hot and spicy.
2. Mint, which is a well-liked flavouring for Albondigas potato soup, may also be included.
