1.  Peel and chop the potatoes

2.  Finely chop broccoli, onion and garlic cloves

Preparing the soup

1.  Heat the olive oil and then dry heat the chopped onion and garlic until they are fragrant.

2.  Now, the chopped potatoes and broccoli must be added to the pot and mix well.

3.  Pour in the vegetable broth and wait till it boils. For 20 to 25 minutes, simmer the soup after lowering the heat.

4.  Blend the soup until smooth.

5.  Add the milk and mix well. Sprinkle pepper and salt to taste when seasoning.

6.  Serve hot with some crusty bread or crackers.

Variations on the recipe

1.  Dried thyme and parsley can be added for improved taste.

2.  Cheese is an additional topping option to get a creamy texture and for an added taste.

3.  Paprika and chilli flakes can also be used to season the soup.
