Preparation of the ingredients
1. Peel and chop carrots, potatoes and onion
2. Finely chop fresh parsley and mince garlic cloves
Preparing the soup
1. 1. Add the olive oil to a pot and heat it on medium. Dry heat the onion and garlic until the onion is aromatic.
2. Add the carrots and potatoes, and sauté for 5 minutes.
3. Add the vegetable broth, salt, black pepper, cumin, coriander, and cayenne pepper. Mix well, and then heat to a boil.
4. Reduce the heat to low, and simmer until the vegetables are tender.
5. Turn off the heat and allow the saucepan to cool.
6. Blend the soup until it is smooth.
7. Return the soup to the pot and reheat it over low heat.
8. Serve hot, garnished with chopped parsley.

1. This recipe can be easily customized by adding other vegetables like celery or by using chicken broth instead of vegetable broth.
