Preparation of the ingredients:

1. Peel and dice the potatoes

2.  Finely chop celery and onion

3. Mince garlic

Preparing the soup

1.  Heat the olive oil and butter. Then add the onions and garlic and dry heat them.

2.  Add the celery and potatoes, and season with thyme, salt, and pepper. Dry heat for about 5 minutes.

3.  Add the stock, either chicken or vegetable, and bring the dish to a boil. Reduce the heat and simmer for about 25-30 minutes.

4.  Once the vegetables are tender, blend the soup to puree until smooth.

5.  Return the soup to the pot and stir in the heavy cream. Heat the soup on low for a few minutes.

6.  Pour the soup into dishes and offer it hot. You can garnish the soup with chopped celery leaves or croutons, if desired.

Variations on the recipe

1.  Broccoli and zucchini can be added instead of celery.

2.  The soup can also be topped up with scallions.
