Preparation of the ingredients

1. Peel and dice the potatoes.

2. Dice the slices of bacon

3. Finely chop the onion and garlic cloves

4. Chop fresh parsley

Preparing the soup

1.  Over medium flame, cook the cubed bacon until crispy in a big saucepan. The bacon should then be taken out to drain any extra oil.

2.  In the same saucepan, sauté the chopped onion and minced garlic in the bacon fat until the onion is translucent. 

3.  Add the diced potatoes and chicken broth to the pan, bring to a boil, and then reduce the heat to low.

4.  Simmer the soup until the potatoes are tender.

5.  Blend the soup until it is smooth and creamy.

6.  Add the heavy cream, salt, and black pepper to the pan and combine well.

7.  Warm up the soup once more over low heat.

8.  Place the bacon bits and fresh parsley on top of the soup before serving.

Variations on the recipe

To make this soup lighter, you can use turkey bacon or omit the bacon entirely and add some chopped vegetables such as carrots and celery for added nutrition.
